If you haven’t noticed already, I haven’t updated my “food blog” in over a year now due to commitments with new ventures, what not. I say “food blog” because I’m humbled by the sheer quality (and quantity) of new food bloggers that are so passionate and creative with their writing. Luckily, I wasn’t dependent on Siuyeh.com to make a living, otherwise I’d be out of business and my write-ups would involve plain watery congee and fermented tofu.
This particular post is also long overdue since I was supposed to write this some 3 weeks ago (right after the dinner) but its easy to come up with excuses, although I really was and still am recovering from this terrible cough-turned-Bronchitis.
So why is this post so significant? I’m thinking perhaps its because I haven’t written anything in so long and I’m just “trying to see if I’ve still got it in me” (my hesitation is also another reason for this much delayed post). But more importantly, I was invited by Sofitel Macau to spend the evening politely devouring Mr. William Frachot’s wonderful dishes and to stay the night there. Let’s be honest, I wasn’t the first to be asked – it turned out all the other more popular foodies were busy with something else that night and the fact that dinner was in Macau made it difficult for most of them to travel from Hong Kong. So if I hadn’t written anything about dinner … I won’t get invited the next time they decide to throw a party! As simple as that Although I’m pretty sure my laziness made it clear to me this was the first and the only time I’d be invited to these sort of things. They’re probably nodding right now as they’re reading this too.
So now that I’ve stated the following entry is a complimentary event, I shall continue without bias, what I thought of dinner, the hospitality and my uncannily good looks.
Dinner by William Frachot
The Amuse Bouche for the night was la Perle Blanche (French White Pearl oyster) in what I believe was a white wine vinaigrette sauce, over a bed of chopped green apples and Enokadake. I was genuinely blown away by this first dish because it was such a creative combination of flavours and texture. You have the sourness from the apples and vinegar, which complemented the fresh oyster really well, but at the same time the natural saltiness (of seawater) from the oyster was still evident. The fact that I still remember this so vividly after so long speaks volume. Not only that, but the Enoki Mushroom added chewiness to a “crunchy” texture from the White Pearl. I could have 3 dozens of these for dinner and I’d be satisfied.

Next came the Pan Fried Sea Scallops with Miso Broth, Shiitake Mushroom & Chorizo. The scallops was one of the bigger ones I’ve seen and it was cooked perfectly, with its core a little undercooked. The Miso Broth and Shiitake Mushroom paired very well with this dish and I was also pleasantly surprised it wasn’t a very thick/heavy sauce. And to wash that down with the Chablis (we were served a full range of Louis Moreau Chablis that night) made it that much better.

The dish I was very much looking forward to, the Pan Fried Foie Gras Escalope with Hibiscus Syrup & Peppered Apple was up next. It was literally just pan-seared without the use of flour to coat and contain the juice inside. I’m not that picky, but I usually do prefer a crunchier layer on the outside. Nevertheless, the natural sweet (almost honey-like) Hibiscus Syrup did the job for me and this combination brought the dish alive. I’d give it a 9.9 out of 10 and the only reason I didn’t give it full points was because we paired this dish with, well, the Chablis (something’s gotta give!). Had the wine been a Sauternes or even an Alsatian VT/SGN or sweet German Riesling, I would have died and gone to heaven a happy man.

Finally, the last of our savoury dishes was the Fresh John Dory Cooked at Low Temperature with Seafood Broth, Lime Oil & Quenelle of Toasted Bread. This being the main course, was also a bit of a down for me. It wasn’t a bad dish, but I thought the John Dory (after being slow cooked at low temperature for a long time) got a little dry. The seafood broth and lime oil was fantastic, but I think the dish would’ve been better if they had gone with a steamed Garoupa; a fish that was alittle smoother and would’ve complemented very well with the theme of using Asian ingredients for the chef’s dishes, which I assumed was what he was trying to do. Again, the toasted bread added a bit of hard, crunchy texture to what I thought was supposed to a soft, smooth dish. The broth was clear and stocky, but that extra bit of cream that was added on the John Dory also created a bit of confusion (at least for me) for the dish. Was he trying to do too much? That said, however, the amount of effort and heart that was put into this dish was obvious.

And then came our dessert for the night, which was a Chocolate Variation. This dessert contained 4 different layers and preparation of chocolate that made it very interesting. It had a warm chocolate mousse on top, followed by chocolate cream, a thicker (cold) chocolate paste on the third layer and finally, small, chocolate chip-like pellets at the bottom. You’ll really need to a swift dig deep into the whole dessert and make sure you’ve scooped everything before you stuff it into your mouth. The sensation is just unforgettable.

The chef did an incredible job creating light dishes for the night and the oyster, scallop and the John Dory went extremely well with the Chablis line-up (see below). In a perfect world (and in my dreams), I can also imagine the server coming over to me with a bottle of chilled Chateau d’Yquem for the foie gras and the chocolate variation dessert. I’d like to also emphasize that the chef and the team cooked all of these dishes in a room-turned-makeshift kitchen within a hotel suite. I always admire and have so much respect for those who can cook anytime, anywhere.

Stay at Sofitel Macau
We were each assigned a room on the executive floor at the Sofitel Macau and I almost felt like I was either working for Conde Naste’s travel publications or I was an agent for the AAA Five Diamond Award (even though they don’t have that in Asia … right?). Everything was pretty spot on and my stay was about as comfortable as any stay can be. The Hermes toiletry products definitely added a touch of exclusivity to the whole experience. I love their beds (its up there for me together with that of W Hotel’s) and the overall cleanliness helped. In terms of decor, there are really only a couple hotels I like in Macau and Sofitel Macau is one of them. The others being Four Seasons and Wynn. The rooms at the Venetian is just big, but the decor is a little tacky and they try too hard with the whole “grand” concept, which might work for our comrades up North.
If I must point our a few things I didn’t like about Sofitel Macau, there are two. The first was its location, which I believe is both the hotel’s attractiveness and its (slight) flaw. The hotel is located on the west side of the main Macau island and its about 3-5 minute walking distance from the main downtown shopping district and the famous St. Paul’s Ruins. At the same time, because the hotel is located in such a convenient part of town, traffic along the main Av. de Almedia Ribeiro tend to get a bit frustrating if you’re taking a cab during peak hours. Unfortunately, I had to find out the hard way. The second was its “casino”. I’m not much of a gambler but I did take a stroll in there. It didn’t really bother me but the casino really just looked like it was in a big convention center with baccarat, crabs and poker tables. It almost looked like it was a temporary casino. They can probably clear that space out and place exhibition booths there overnight! Oddly enough, the place was still packed.

Police in America were today investigating how a batch of bootleg energy drinks with labels poking fun at Tiger Woods’ “indiscretions” had hit supermarket shelves.
Shoppers in Safeway and King Soopers stores across Denver last week began noticing hundreds bottles of energy drink Gatorade had been tampered with.
The bottles feature an altered label with the word “Unfaithful” instead of the brand’s usual slogan “Focus” along with wife Elin Nordegren.
Gatorade had been one of Woods’ major sponsors, but ended their endorsement of the golf star in December after news broke of his alleged affairs with more than a dozen women.
The drinks company have been forced to issue a statement over the prank, confirming that the labels were fake and had not been printed by the company.
Police say they are unsure how the bootleggers were able to sneak the product into the shipments, but it is understood the label tampering was the work of a local artist as part of a “pop art” project.
“He doesn’t want to be contacted,” a friend of the unnamed artist said. “He want to remain anonymous because there are similar future projects in the works.”

When Michelin Guide Enters China
The Michelin Guide Hong Kong Macau 2010 hit the shelves with a lot less fanfare compared to its inaugural launch last year, but the new guide seemed to have made amends for much of the controversies we saw a year ago. This is because:
A) Even more restaurants got awarded stars (heck, more restaurants got mentioned, period.)
B) The Michelin folks are starting to understand how the game is played here
C) Nobody really cares
D) All of the above
Whatever it is, I feel it is only a matter of time before the Guide makes inroads into China and the “success” of the Hong Kong guide helps address the elephant in the room. The question is, how far are the folks at Michelin willing to go in order to capture the China market, while not jeopardizing its core mission and values? Afterall, its pretty easy satisfying 7 million people, but 1.3 billion? (Figuratively speaking of course. The author is fully aware that the target demographic is not nearly as big). But come to think of it, its really nothing to worry about because the answer to this dilemma is called the “simple shop pictogram”.
What we certainly enjoy when we’re exploring China is hunting for great hole-in-wall restaurants and more likely than not, they aren’t exactly star-worthy (or even Bib Gourmand-worthy for that matter). A vast majority of affordable restaurants in China would probably fail the rigorous ambiance and hygiene tests. One exercise we saw the Michelin agents do with the 2010 guide was to beef-up the the number of simple shops; affordable restaurants that deserve notable mentions. Otherwise, fiery will descend on them and all credibility will be lost. The simple shop pictogram in the 2010 Hong Kong and Macau guide saw a 264% (from 11 to 29) increase compared to the first edition.
Expect to see a 1,000-page Michelin Guide China 2015 with 100 pages dedicated to star restaurants and Bib Gourmand suggestions and about 900 pages for “simple shops”. But don’t get me wrong, I respect what Michelin’s doing for Hong Kong and they’re definitely taking positive steps in localizing themselves to cater to our food culture. It’d be interesting to see what other tricks they have up their sleeves for China. Don’t even get me started on a Michelin Guide for India!

Part of why I haven’t been updating, other than being lazy and pre-occupied with something else, was because my site wasn’t working properly. For a while I was really turned off with updating because nothing seems to work (no thanks to my previous “programmer” who basically took a massive dump on my domain and left without flushing the toilet).
Enter Zulf. A professional programmer (professional, in every sense of the word) / blog installer who took less than a day to fix all my problems AND went beyond what I had asked and fixed those bugs AND at very affordable prices too DESPITE attending to family issues at the hospital. Tateishi Burger (Horikiri 3-17-15, Katsushika-ku, tel. 03 3695 9133) is an old-school hamburger joint with a faux-modern twist: Patrons can order burgers through a coin-operated ‘vending machine.’ In a country obsessed with vending machines this one takes the love affair to a new, albeit technically inferior level. Pop in ¥100 and out drops the Tateishi Burger. Plop in ¥300 to the orange vending machine nearby, and a Tateishi Royal Burger with pickles and bacon rises from the bottom.
Just don’t try to order two at a time. The machine is automatic — and not really a machine. It’s more like the 18th century chess-playing Mechanical Turk. The chef cooks the burgers in his kitchen and manually operates the machine with a piece of string.
The burger vending machine gimmick is fun, but maybe not fun enough to take a trip all the way out to Katsushika-ku.

MANDARIN ORIENTAL, HONG KONG WINS MICHELIN STARS FOR TWO OF ITS RESTAURANTS
HONG KONG 26 November 2009 – Celebrations are underway at Mandarin Oriental, Hong Kong following the Michelin announcement that Pierre restaurant keeps its one star rating while The Mandarin Grill gains its first star. The results were announced at today’s 2009/2010 Hong Kong and Macau awards ceremony.
“The Michelin Guide is one of Europe’s oldest guides to dining and that heritage and reputation make it widely respected,” says General Manager, Jonas A Schuermann. “It is an honour to be included in the guide and Mandarin Oriental, Hong Kong is delighted that both Pierre and The Mandarin Grill have been awarded stars this year.”
Pierre restaurant gained its first star in last year’s inaugural Michelin Guide and the renewal of this accolade is a testament to the vision and creativity of Chef Olivier Elzer who joined the team in August. He is an exceptional talent with a passion for excellence who has already had a remarkable impact on the restaurant’s menu which he has entirely rewritten since his arrival. The restaurant itself has seen recent physical changes with the arrival of new furniture and table settings to add to the ambience.
Proud to have retained the restaurant’s star, Chef Olivier is already eyeing the future with plans for taking Pierre to still higher levels of excellence, saying, “Our Michelin star is very inspiring for the whole Pierre team and we are looking forward to showing diners where we will take the restaurant next.”
First-time Michelin star winner, Chef Uwe Opocensky, was visibly delighted by the award, saying that he has dreamed of winning a Michelin star since the age of 16. “This is without a doubt the proudest moment of my career to date,” states Opocensky.
Ably assisted by Martin Cahill, The Mandarin Grill’s Chef De Cuisine, Chef Uwe stamped his mark on the restaurant, introducing a new interpretation of grill classics that show his deft touch and outstanding talent. Inspired by his experience of working for some of the world’s greatest chefs, Opocensky delivers the unexpected with a classical underpinning. Intelligent, thought-provoking and always creative, his food evinces an almost whimsical approach yet nonetheless remains rooted in classical cooking traditions.
