If you haven’t noticed already, I haven’t updated my “food blog” in over a year now due to commitments with new ventures, what not. I say “food blog” because I’m humbled by the sheer quality (and quantity) of new food bloggers that are so passionate and creative with their writing. Luckily, I wasn’t dependent on Siuyeh.com to make a living, otherwise I’d be out of business and my write-ups would involve plain watery congee and fermented tofu.
This particular post is also long overdue since I was supposed to write this some 3 weeks ago (right after the dinner) but its easy to come up with excuses, although I really was and still am recovering from this terrible cough-turned-Bronchitis.
So why is this post so significant? I’m thinking perhaps its because I haven’t written anything in so long and I’m just “trying to see if I’ve still got it in me” (my hesitation is also another reason for this much delayed post). But more importantly, I was invited by Sofitel Macau to spend the evening politely devouring Mr. William Frachot’s wonderful dishes and to stay the night there. Let’s be honest, I wasn’t the first to be asked – it turned out all the other more popular foodies were busy with something else that night and the fact that dinner was in Macau made it difficult for most of them to travel from Hong Kong. So if I hadn’t written anything about dinner … I won’t get invited the next time they decide to throw a party! As simple as that 
Although I’m pretty sure my laziness made it clear to me this was the first and the only time I’d be invited to these sort of things. They’re probably nodding right now as they’re reading this too.
So now that I’ve stated the following entry is a complimentary event, I shall continue without bias, what I thought of dinner, the hospitality and my uncannily good looks.
Dinner by William Frachot
The Amuse Bouche for the night was la Perle Blanche (French White Pearl oyster) in what I believe was a white wine vinaigrette sauce, over a bed of chopped green apples and Enokadake. I was genuinely blown away by this first dish because it was such a creative combination of flavours and texture. You have the sourness from the apples and vinegar, which complemented the fresh oyster really well, but at the same time the natural saltiness (of seawater) from the oyster was still evident. The fact that I still remember this so vividly after so long speaks volume. Not only that, but the Enoki Mushroom added chewiness to a “crunchy” texture from the White Pearl. I could have 3 dozens of these for dinner and I’d be satisfied.

Next came the Pan Fried Sea Scallops with Miso Broth, Shiitake Mushroom & Chorizo. The scallops was one of the bigger ones I’ve seen and it was cooked perfectly, with its core a little undercooked. The Miso Broth and Shiitake Mushroom paired very well with this dish and I was also pleasantly surprised it wasn’t a very thick/heavy sauce. And to wash that down with the Chablis (we were served a full range of Louis Moreau Chablis that night) made it that much better.

The dish I was very much looking forward to, the Pan Fried Foie Gras Escalope with Hibiscus Syrup & Peppered Apple was up next. It was literally just pan-seared without the use of flour to coat and contain the juice inside. I’m not that picky, but I usually do prefer a crunchier layer on the outside. Nevertheless, the natural sweet (almost honey-like) Hibiscus Syrup did the job for me and this combination brought the dish alive. I’d give it a 9.9 out of 10 and the only reason I didn’t give it full points was because we paired this dish with, well, the Chablis (something’s gotta give!). Had the wine been a Sauternes or even an Alsatian VT/SGN or sweet German Riesling, I would have died and gone to heaven a happy man.

Finally, the last of our savoury dishes was the Fresh John Dory Cooked at Low Temperature with Seafood Broth, Lime Oil & Quenelle of Toasted Bread. This being the main course, was also a bit of a down for me. It wasn’t a bad dish, but I thought the John Dory (after being slow cooked at low temperature for a long time) got a little dry. The seafood broth and lime oil was fantastic, but I think the dish would’ve been better if they had gone with a steamed Garoupa; a fish that was alittle smoother and would’ve complemented very well with the theme of using Asian ingredients for the chef’s dishes, which I assumed was what he was trying to do. Again, the toasted bread added a bit of hard, crunchy texture to what I thought was supposed to a soft, smooth dish. The broth was clear and stocky, but that extra bit of cream that was added on the John Dory also created a bit of confusion (at least for me) for the dish. Was he trying to do too much? That said, however, the amount of effort and heart that was put into this dish was obvious.

And then came our dessert for the night, which was a Chocolate Variation. This dessert contained 4 different layers and preparation of chocolate that made it very interesting. It had a warm chocolate mousse on top, followed by chocolate cream, a thicker (cold) chocolate paste on the third layer and finally, small, chocolate chip-like pellets at the bottom. You’ll really need to a swift dig deep into the whole dessert and make sure you’ve scooped everything before you stuff it into your mouth. The sensation is just unforgettable.

The chef did an incredible job creating light dishes for the night and the oyster, scallop and the John Dory went extremely well with the Chablis line-up (see below). In a perfect world (and in my dreams), I can also imagine the server coming over to me with a bottle of chilled Chateau d’Yquem for the foie gras and the chocolate variation dessert. I’d like to also emphasize that the chef and the team cooked all of these dishes in a room-turned-makeshift kitchen within a hotel suite. I always admire and have so much respect for those who can cook anytime, anywhere.

Stay at Sofitel Macau
We were each assigned a room on the executive floor at the Sofitel Macau and I almost felt like I was either working for Conde Naste’s travel publications or I was an agent for the AAA Five Diamond Award (even though they don’t have that in Asia … right?). Everything was pretty spot on and my stay was about as comfortable as any stay can be. The Hermes toiletry products definitely added a touch of exclusivity to the whole experience. I love their beds (its up there for me together with that of W Hotel’s) and the overall cleanliness helped. In terms of decor, there are really only a couple hotels I like in Macau and Sofitel Macau is one of them. The others being Four Seasons and Wynn. The rooms at the Venetian is just big, but the decor is a little tacky and they try too hard with the whole “grand” concept, which might work for our comrades up North.
If I must point our a few things I didn’t like about Sofitel Macau, there are two. The first was its location, which I believe is both the hotel’s attractiveness and its (slight) flaw. The hotel is located on the west side of the main Macau island and its about 3-5 minute walking distance from the main downtown shopping district and the famous St. Paul’s Ruins. At the same time, because the hotel is located in such a convenient part of town, traffic along the main Av. de Almedia Ribeiro tend to get a bit frustrating if you’re taking a cab during peak hours. Unfortunately, I had to find out the hard way. The second was its “casino”. I’m not much of a gambler but I did take a stroll in there. It didn’t really bother me but the casino really just looked like it was in a big convention center with baccarat, crabs and poker tables. It almost looked like it was a temporary casino. They can probably clear that space out and place exhibition booths there overnight! Oddly enough, the place was still packed.
